The Biscardo family – together with some Emilia Romagna’s farmers – created this Sangiovese. The harvest is made towards the end of autumn when the grapes already partially dried on the plant are harvested by hand and left in crates for a period of drying in driers. At the end of December, a slow maceration begins at low temperatures and the wine is kept on the lees until March. Enigma is obtained from a 100% drying process. It is worth mention that by the time Biscardo Family created this first in Italy IGT Rubicone Appassimento 100%, they had everything, but not the name. The bottle was just as planned, a particular heavy bottle, and incredible label, a wonderful case, a unique wine and all together to celebrate Biscardo 140 Jubilee! But the only missing element was the name to be used. One day Maurizio and Martino Biscardo were together with their enologist and a consultant in the company where Enigma was being produced, after tasting the final result nobody could believe the feeling in the mouth and the perfume. It was a wine that they had never tasted before, a unique creation. After some years of very hard work, every time a tasting was made new elements were appearing and step by step it was a discovery experience. One day after a new tasting and on their way home, Martino and Maurizio were talking about this new wine. They agreed on the fact that the wine was something special, it can change step by step, it is difficult to understand immediately but then all sensations are amazing, but again what name could be used? “Original”? “Strange”? “Unique”? “Unbelievable”? All those were difficult names in Italian without any strong sense in English. Then suddenly a brilliant idea: Enigma. Enigma respects its own sense in many languages: English, Italian, German. Enigma is the name they were looking for to represents the Enigma unique wine. This is a true story, right in your hands.
Serving Suggestion: Enigma may be enjoyed on its own as a meditation wine, due to its naturally balanced characteristics. Well paired with meats and aged cheeses.
