Description
Our NEROPASSO is produced with Corvinone, Corvina and Cabernet grapes, with the typical “appassimento” method. The Appassimento is a unique method, which has always characterized the production of wines in our territory. This technique has its roots in a very distant past and has been remembered since the Roman era. Over the centuries this technique of “”drying”” the grapes before crushing them has improved and today distinguishes the production of great wines. It is necessary a high-level experience to bring, select and use the proper grapes to finally obtain Neropasso. In order to have an excellent product, Appassimento technique is fundamental. On this critical and delicate phase (also linked to the cycle of seasons), the grapes, perfectly ripe, are selected with the manual harvesting. We choose the sparsest bunches, with the grapes not too close together, so that air can easily circulate. The bunches are laid in large perforated plastic boxes, to guarantee excellent aeration. The boxes are stacked in the loft, a large ventilated room and they are periodically checked to ensure a perfect procedure.
