Description
After a cold maceration for 5 days at 10ºC, fermentation begins with native yeasts. It takes about 7 days. Once finished, the wine is separated from its skins and goes to the press. We always prioritize freshness and fruit over extraction in this line. A part of the wine is aged in second-use French oak barrels.
